I love the abundance of fruit in the summer, so much so I usually go a bit overboard. I can't count the amount of times I've stocked up on several pints of berries at the Farmer's Market, and it takes all my will power to save any at all for Tyler on my drive home, as I munch my way right through them! If any berries make it past both me and Tyler, my favorite thing to do is make my Grain Free Blueberry Muffins, or to pile them into a large dinner salad with grilled chicken and my 2-Ingredient Balsamic Vinaigrette from the blog.⠀

Tomorrow is the first day of summer! ☀️ We are celebrating by prepping these Chunky Monkey Brownie 'Nice' Cream Sandwiches! ⠀

#dEATS from our favorite foodie, @themindfulhapa!⠀
Flourless Fudge Brownie⠀
3 large eggs⠀
¾ cup coconut sugar⠀
½ cup tahini⠀
1 tsp vanilla extract⠀
⅓ cup cocoa powder, sifted⠀
¼ tsp salt⠀
2 bars - @theochocolate Pure 70% Dark Chocolate bar, roughly chopped⠀
1 tbsp coconut oil⠀
⠀
Chunky Monkey ‘Nice’ Cream⠀
2 large bananas, cut into slices and frozen⠀
2 tbsp almond milk⠀
¼ cup natural peanut butter + additional ⅓ cup⠀
⅓ cup Toasted coconut flakes⠀
½ bar, @theochocolate Coconut 70% Dark Chocolate bar, chopped⠀
⠀
1. Preheat oven to 350F and line two, 8x4 loaf pans with parchment paper.⠀
2. Make your Flourless Fudge Brownie - start by stirring together wet ingredients in a large mixing bowl.⠀
3. Once combined, stir in your sifted cocoa powder and ¼ tsp salt.⠀
4. Lastly stir in two bars of melted @theochocolate 70% dark chocolate/coconut oil mixture (in a microwave safe bowl, melt the bars with 1 tbsp coconut oil in 30-second intervals until melted, ~90 seconds)⠀
5. Once combined, split batter between the two 8x4 loaf pans and bake at 350F for 15 - 17 minutes⠀
or until knife inserted comes out clean. Let cool for 15 minutes in pan before removing to cool completely.⠀
6. Once your brownies have cooled completely, make your Chunky Monkey ‘Nice’ Cream. In a food processor or high-speed blender, add your frozen banana slices and almond milk.⠀
7. Once no chunks of banana remain, add in the ¼ cup of peanut butter, toasted coconut flakes, and half of a @theochocolate coconut bar, blending until fully combined.⠀
8. Time to assemble - line an 8x4 loaf pan with parchment paper and place one of the cooled brownie halves, top down. With a spatula, evenly spread half of the ‘nice’ cream mixture and swirl in extra ⅓ cup peanut butter.⠀
9. Pour remaining half of the ‘nice’ cream on top, spreading in an even layer with the spatula. Top with the other 8x4 cooled brownie layer.⠀
10. Move to freezer to harden (~1 - 2 hours).⠀
11. Remove from loaf pan and trim edges/excess nice cream. Cut into 8 slices. Store in freezer in an airtight container and serve cold.

I haven’t been feeling the best lately. ☹️ Some of you may know (I forgot if Ive mentioned it before) but I have IBS which stands for irritable bowel syndrome. IBS causes problems within your large intestine like bloating, abdominal pain, and constipation.🤢💨

Ever since I was little, Ive been dealing with this, and its something that I worry about all of the time. 😓
.
Majority of the time, I can stay on top of it, and its gotten a lot better ever since I’ve started eating clean and cutting out gluten and dairy from my diet. 🙅🏼‍♀️ But every now and then, I get “flare-ups” like I have now which cause me to be in SO much pain and get backed up (if you know what I mean)😉 and I don’t know what causes it. Which stresses me out even MORE. 🤦🏼‍♀️I even had to take medicine which I HATE doing because if possible I like to let my body heal itself naturally! 🧘🏼‍♀️

Something about me: I like to know everything😂
So when I can’t figure out why something happens (aka my IBS flare-ups) it makes me STRESSED. And stress just adds to my gut problems! UGHHH.
.
.
The food you eat obviously plays a big role in it because its your digestive system, but stress is also a major factor since your mind is connected to your gut! 🧠 100% of the time, I’m eating fruits and veggies, getting enough fiber, drinking tons of water💦, getting at LEAST 7 1/2 hours of sleep per night😴, and I consider myself not to be stressed most of the time.

.
I don’t eat dairy or gluten, so another thing it could be is soy! So for the next couple of weeks, I won’t be including any soy in my diet to see if that helps! 🤞🏼
.
Sorry for this long post, but I feel like I needed to show you guys that I do not feel good and perfect 100% of the time. We ALL have our off days❌

I was never into weighing or measuring my food or anything that involved lots of work and effort and calculations ⠀⠀
I just wanted to be able to look at my plate and say that is the right portion for me..
⠀⠀
And with the help of using my portion containers for almost two years and my plate it method, I can eyeball my food and know what’s right for me..I know my #portionsize and what #balancedmacronutrients (how much of what type of food) I need ⠀⠀
I’ve found what works for me and I stick to it (well for the most part 🤪) ⠀⠀

We've been taught that breakfast is the most important meal of the day, however during the hours of 4am until noon our body is in an elimination cycle where it is removing waste.  It is best to go easy on our digestive system as much as possible during these hours.  Eating fruit (always on an empty stomach) or drinking water, juices and smoothies will give us energy, provide nutrients and provide high water content foods that will help transport toxins out of our body!

Piri Piri Paneer steak served with Tangy cheesy Tomato corn based sauce. 
Paneer Piece stuffed with Melting Cheese dipped in to Cheesy creamy sauce is all you need for the evening craving. 
INGREDIENTS

for Paneer & Marination 
Oil - 1 teaspoon
soya sauce - 0.25 teaspoon
Green Chilli Sauce - 0.25 Teaspoon
Garlic powder - 0.25 Teaspoon
ketchup - 2 Teaspoons
pizza herbs - 0.50 Teaspoon
Cheese spread - 1 Teaspoon

Paneer - 100 gm cut in square shape with 1.5 Cm width 
For Sauce 
Tomato - 1 Finely chopped
Sweet Corn - 2 Tablespoons
Garlic - 4clobes chopped finely
Butter - 2 Teaspoons
Garlic Powder - 1 Teaspoon (Optional)
Cheese spread -  1 Teaspoon
Pizza herbs - 1 teaspoon
Black pepper -  0.50 Teaspoon

For Toppings 
Cauliflower - 0.50 Cup boiled 
Green peas - 1 Table spoon boiled

PROCEDURE

1. Mix  well all the contents listed for marination above 
2. Take the paneer cut it in to  square shape  and  slice 0.25 part through knife from all edges (Sand which form) amd put the cheese spread and marinating in between.

3. Marinate the paneer well cover all the edges then coat the marinated paneer with rava.

4. Heat oil in the pan Shallow fry the Paneer till it gets light brown from all edges your paneer steak will be ready.

5. For sauce heat the butter in the pan add the garlic to it then Tomatoes and Sweet corn saute it for 3 minutes.

6.Add Garlic powder and pizza herbs to the mixture then add Wheat flour (Maida) in it 
7.Slowly add Milk to it mix it well then add the cheese spread.Stir the mixture for around 2 minutes on low flame 
8. Blend the whole mixture to the thick pink creamy sauce.

9. Pour the sauce in to the plate (With Deep Centre) put the paneer steak over the sauce then pour the remaining sauce on it.

10. Garnish Paneer steak by putting Boiled seasoned (with Remaining marinated sauce and organo) Cauliflower and green peas over it. You may use any veggies of your choice for salad •

I don’t necessarily think that chickpea omelettes taste exactly like egg omelettes, but I DO think they taste like a different yummy food that I can also stuff with veggies and other yummy things  and eat all the time 🤨 overstuffed the omelette as always with zucchini, red onion, mushrooms and @sperofoods chipotle goaty cheese and topped with salsa. Served with crunchy avo toast and berries!!! ..

If you've been following me for a while you know I LOVE pancakes! Especially topped with the best berry topping!

Fast, easy and loaded with carbs...if you're into that stuff. 😜
Ingredients: - 1/2 cup whole wheat and 1/2 cup all purpose flour - 2 tsp of sugar - 1 tsp baking powder - 1/2 tsp salt - 1 cup of non-dairy milk - 1 tsp apple cider vinegar - optional extract ( I like to use almond extract since I top my pancakes with almonds, but you can use vanilla or whatever you'd like).

Directions:
In a medium bowl mix all dry ingredients. In a small bowl mix all wet ingredients. Add the wet to the dry and whisk together being careful not to over mix.

I used to be so negative against some foods, I didn’t even try them and I used to say I don’t like them, that has changed I’ve realized one thing, I may not like it one way it cooked or made but I may like it another way! Remember food makes us happy and if you go into a meal with a mind set you won’t like it cause u never did, more then likely no matter how good it is, u will make the decision not to like it again!
