What’s a coffee smoothie you say? 
It’s only my favorite summer beverage and way more satisfying than a $6 cold brew! 
All you have to do is brew coffee at night and place in the fridge, OR put leftover coffee in a jar, to cool. Then, the options are endless! This is my go-to:
Chilled Coffee 
1/2 frozen banana 
Splash of milk of choice, I used Oat
1 tsp ashwaghanda 
1/2 scoop vegan vanilla protein powder 
Cinnamon 
Handful of ice cubes 
See?! Coffee smoothie!
You can absolutely do without the protein powder and use different adaptogens or just keep it simple with the banana, milk, and ice and it tastes just as refreshing and delicious ! 💗

Summer 🌞lemon tart- your ideal sweet treat for hot, summery days!It’s also vegan,🌱 gluten-free and refined sugar free!

Vegan lemon tarts 🍋

Ingredients
The base
2 cups raw almonds

2 cups pitted dates

1 cup shredded coconut

The lemon filling
1 cup freshly squeezed lemon juice

1 1/2 cups full fat coconut cream

1/3 cup rice malt syrup

1 tbs lemon zest

1 tsp powdered agar agar

tiny pinch of turmeric (optional: for colour, you shouldn't be able to taste it)

The base
▪️Pulse all the ingredients in a high speed blender or food processor until mixture sticks together. Try not to over blend, there should still be some texture from the almonds. ▪️Press mixture evenly into mini tart tins approx 8cm. ▪️Chill in the fridge while you make the filling.

The filling
◾️Gently heat all the ingredients, except the agar agar in a small pot on low heat. ◾️Once heated through whisk in the agar agar. ◾️Bring mixture to the boil, reduce heat & simmer for a few minutes. ◾️Allow the mixture to cool a little. ◾️Pour into bases & chill in the fridge for a few hours or overnight. ◾️Best consumed straight from the fridge. ◾️Makes approx. 10 tarts 8cm in diameter.

one of my favorite holidays is quickly approaching... the 4th of july🇺🇸 I always like to contribute an easy side dish or dessert, but typically become way too indecisive figuring out what to make🤣 LUCKY for us both, I think I’ve created the perfect recipe thanks to @bobsredmill almond flour & a few other simple ingredients! I like to pride myself on creating easy, simple recipes that also taste good, but guys... this is on ANOTHER LEVEL when it comes to both simplicity & taste! and bonus points for incorporating blue into the recipe, right?😉 don’t worry flops, I’ll make another one before the 4th since you already finished the first batch.

recipe:
2 c @bobsredmill almond flour
1/2 c plain greek yogurt
1/4 c maple syrup
3 eggs
1/8 tsp baking soda
1/8 tsp almond extract
1/2 c + 1/4 c frozen blueberries (can use fresh)
COMBINE greek yogurt, eggs, maple syrup & almond extract in a bowl. ADD in almond flour & baking soda. MIX until well combined and there are no lumps in batter. ADD in 1/2 c frozen blueberries. MIX well. SPRAY 8x8 cake pan with coconut oil. POUR cake batter into cake pan. TOP batter with remaining 1/4 c blueberries. BAKE at 350 for 30-35 minutes or until toothpick comes out clean. LET COOL. SLICE into squares — makes 16 squares. ENJOY! ❤️💙

i actually can’t even believe i made these PALEO EVERYTHING BAGELS 😎 i’m over here feeling like a professional bagel maker, excuse me while i bow down to myself for a min 😂🤣 they are gluten free, grain free, nut free, and yeast free. i have a few bagel recipes on my blog, but THIS recipe is The One—i adapted the recipe from my girl @paleoglutenfreeeats. and let this be known that it was the first time i’ve made anything with cassava flour, and YEAH—love it. taste and texture on point. here’s how i made them:
.
1 cup cassava flour (i used @ottos_cassava_flour)
1 cup arrowroot flour 
4 medium eggs
1/4 cup olive oil (her recipe calls for palm shortening)
2 tb maple syrup
1 tb water
1 tsp baking powder 
pinch sea salt
@traderjoes everything but the bagel seasoning (or sesame seeds)

preheat oven to 350. line a baking sheet with parchment paper. meanwhile boil a big pot of water. in a blender, add all of the dough ingredients except for the EBTB seasoning. once combined, transfer the dough from blender to a medium bowl, and use your hands to form a ball. then separate into four equal parts. once the water is boiling, form four bagels and gently drop them in the water. once each one floats to the top (about one min), transfer to the baking sheet. i brushed each bagel with an egg wash and then added EBTB seasoning. you don’t have to do the egg wash, but i like it because it makes the bagels brown! bake 23-25 minutes. ENJOY!!!!!! #kalejunkie

1 papaya mediana, madura.
1 taza de yogur sin lácteos. (Puedes usar el yogurt que guste)
3/4 taza de arándano y frambuesas frescas. ( puedes sustituir las frutas por la que gustes)
1/2 banana, en rodajas
1 kiwi en rodajas
1/2 taza de granola
1 cucharada de hemps (opcional)

1. Cortar la papaya por la mitad a lo largo.
2. Saque las semillas y raspe un poco para crear un tazón pequeño.
3. Rellene cada lado por igual con yogur, frutas y granola. ¡Disfrute! —————————————————

He said: pancakes... so here we are! this is why I like Wednesday’s: my workout starts earlier, so I’m home early to make him some breakfast, which i really enjoy. 1 tsp cinnamon

mix all well in a bowl. Let sit for two minutes to thicken. spoon onto a lightly greased pan and flip once! load up the toppings and DIG IN (either you or your loved ones 😊).

My personal favorite is the portobella pizza but all of these are great fun options you can make at home. Get crazy with it and add some fun toppings of choice! Info below:

Bell pepper pizza - 1/2 bell pepper, 1/4 cup marinara sauce, 2 tbsp mozzarella cheese + 2 broccoli florets.
.
Portable pizza - 1/2 Portabella mushroom cap, 1/4 cup marinara sauce, 2 tbsp mozzarella cheese, 2 basil leaves, 1 olive cut into slices.
.
Zucchini pizza boats - 1/2 zucchini, 1/4 cup marinara sauce, 2 tbsp mixed cheese, 2 cherry tomatoes.
.
Rice cake pizza - 1 rice cake, 1/4 cup marinara sauce, 2 basil leaves, 2 tbsp mozzarella cheese.

Pita pizza - 1 medium pita, 1/4 cup marinara sauce, 2 tbsp mozzarella cheese, 2 basil leaves + 3 cherry tomatoes.

Pizza pizza - Ordered from the doughroom in Culver City haha Because sometimes you can treat yo self to a damn real pizza.

How to cook the veggie pizzas:
1 - Preheat oven to 350F.
2 - Scoop out the inside of the mushroom, bell pepper or zucchini boat (you can cook the bell pepper or zucchini in oven before adding toppings or add toppings then cook if you don’t need it well done. Mushroom you can add the toppings right away & cook) 
3 - Add 1/4 cup marinara, toppings & cheese
4 - Bake in oven for about 10 minutes then enjoy!

There’s honestly nothing I love more than sharing company with friends and family over food, especially in the summer. This week I’m getting July 4th ready with a little help from @bobsredmill organic gluten free white quinoa, a personal whole grain favorite that makes for an amazing blank canvas when it comes to trying out different flavor profiles. The salad only requires 9 ingredients (including the dressing) and takes a total of 30 minutes to make and is a perfect option to make in bulk for meal prep or larger parties and can easily be customized to your liking. Now I’m just praying for a little sunshine and warmth so I’m not stuck eating this salad inside... .

RECIPE: serves 5
1 1/4 cup @bobsredmill dry white quinoa Cooked according to package directions 
2 bell peppers diced
1 medium cucumber diced
1/2 cup cherry tomatoes sliced in half
A handful of parsley roughly chopped

DRESSING 
4 tbsp balsamic vinegar
1 tbsp lemon juice
2 tbsp maple syrup
2 tbsp Dijon mustard
A pinch of sea salt to taste 
Directions
While quinoa is cooking prep your veggies and whisk together salad dressing ingredients. Transfer veggies to a bowl and allow quinoa to cook completely before adding to the veggies. Once quinoa is cooked combine veggies, quinoa and dressing until everything is evenly distributed. And that’s it!

I made this a couple days ago for hubs. We like to go to Ravinia, and I’m always trying to figure out the easiest and tastiest things to bring with us. I just wanted to create something with easy ingredients, minimal prep, and most of all, something I knew he would love. ✨
Here it is! The easiest cold salad that is mostly pantry ingredients! I made @eatbanza rice, rinsed it really well in cold water and then tossed it in olive oil. Then I added half of a red onion, chopped pretty small, a whole bunch of fresh parsley, chopped, a jar of pitted kalamata olives, a jar of capers, a 4 Oz portion of smoked salmon and some almond milk ricotta. 🤤 this is the perfect summer side dish, picnic dish, dinner on its own, mid afternoon snack, anytime you want something savory and delicious!

My daughter’s new thing is to push herself just far enough back from the table in her tray-less highchair so she can prop her feet up onto the edge of the table, plate balancing in her lap, and proceed to eat her meal, silverware and all. The mom in me repeatedly corrects her to put her feet down but secretly I’m pretty impressed by her ability multi task like that. 😳 #wheredotheycomeupwiththisstuff

Although feet on the table is a no-no these blueberry lemon overnight oats are a big yes-yes! Made my basic overnight oats (minus the zucchini) then swirled in some warmed blueberries + a squeeze of lemon 👌🏻😋💙

Hoy os dejamos esta receta ideal para el verano🌞
Se trata de un helado fresquito que podrás comer a ma hora que quieras. Además es muy muy sencillo y rápido de hacer; sólo deberás tener fruta troceada y congelada. La trituras con un poquito de leche y ya está! Si quieres también le puedes añadir una cucharita de proteína para convertirlo en helado proteico🤤
Finalmente le añades los toppings qe quieras. En nuestro caso le hemos puesto semillas de chía y coco rallado🥥

Este platillo es lo más deli y me recuerda demasiado a mi niñez! La única diferencia es que antes me cocían las tortillitas en una alberca de aceite y le agregaba medio bote de ketchup 😅.

Súper practico, rápido, y deli! Triture 3 tostadas susalia (o tu tostada favorita) sobre un sartén con tantito aceite de aguacate en spray y deje 5 minutos para q se tostaran/aguadaran. Después, agregué 1 huevo y 3 claras. sazoné con un poquito con sal del Himalaya y pimienta. 
Por último, 1/3 de aguacate y listo!

HUMMUS INFUSIONS. What’s your favorite combo!? We’re loving this  roasted garlic & carrot hummus ✨

Been putting garlic in everything lately - word is it repels ticks & mosquitos! Anything to keep those little blood suckers at bay! Apparently they’re attracted to potassium rich foods so people who eat a lots of bananas and avocados beware!

For the hummus:
🥕3 gloves garlic (roughly chopped)
🥕3-4 large carrots (roughly chopped)
🥕1-2 TB tahini
🥕 1 can of chick peas (drained / rinsed)
🥕 Juice of 1 lemon
🥕 1 TB EVOO
🥕 Salt to taste
♥ Roast garlic and carrots for about 30 mins at 425F
♥ Combine all ingredients in the blender and blitz on high for at least 30 seconds
♥ Enjoy!

• ¼ cup flour (whole wheat, oat, chickpea, or almond)
• ¼ cup onion (thinly sliced)
• ¼ cup parsley (finely chopped)
• olive oil ————————————————————————-• Put the spaghetti squash in the microwave for 10 minutes to get it soft. Cut it in half and scoop out the seeds
• Bake the spaghetti squash in the oven at 400°F for 40 minutes or until tender
• Scrape out the spaghetti squash and mix with the other ingredients in a large bowl
• Heat the olive oil in a pan and scoop spoonfuls of the mixture onto the pan
• Press down on the latkes with a spatula periodically and flip over when brown
• Serve with apple sauce or Greek yogurt

GRANOLA BUTTER BANANA PANCAKE BARS! 🥜🍌💯 Eeeek! 😬Like I said, “Been putting this granola butter on everything!” These bars are perfect! 🤩 Keeping these in the fridge for a quick brekkie is definitely going to be a regular thing around here! 😋

2 1/2 cups paleo pancake mix @birchbenders (Any flavor, we actually used pumpkin)
1/8 cup granola butter @kweenandco or nut butter of choice
1 tablespoon sunflower seed butter @onceagainnutbutter 
2 ripe bananas
1/4 cup vanilla unsweetened almond milk 
Process in food processor. Pour into a baking pan lined with coconut oil or parchment paper. Top with fresh blueberries, raspberries & granola butter. Bake at 350 for about 20-25 min. Stick a toothpick in it to see if it comes out clean. Take out and top with a lil more granola butter! Slice and enjoy! I store mine in the fridge! Enjoy!
