Throwback to one of my favorite Quest recipes!! Muffins are definitely one of my guilty pleasures but they are always PACKED full of calories, sugar, and fat. 🚫
LUCKILY @questnutrition has my back with this delicious blueberry muffin recipe!! 👌 These protein muffins are sweet with a nice golden crunchy top and juicy blueberries that pop in your mouth. Perfect to satisfy my muffin cravings
Each Quest muffin has 116 calories, 10g C/4g F/13g P
To put that in comparison, a blueberry muffin from King Soopers has 320 calories, 42g C/15gF/4g P ... that is insane!! You can have about 3 of the Quest muffins for ONE of the King Soopers muffins!!! There is no reason to not enjoy your favorite foods while trying to stick to a healthy diet. All you have to do is find lots of recipes and substitutions to help you stay on track! 💪
BLUEBERRY MUFFIN RECIPE:
2 Blueberry Muffin Quest Bars®
2 scoops Quest® Vanilla Milkshake Protein Powder
2 egg whites
½ cup unsweetened almond milk
½ cup zero-calorie sweetener
¼ cup unsweetened applesauce
1 teaspoon vanilla extract
½ teaspoon almond extract
½ cup coconut flour
¼ cup almond flour
1 tablespoon coconut oil, melted
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup plus ¼ cup fresh blueberries
Preheat oven to 350°F.
Line a muffin pan with ten foil liners.
Break Quest Bars® into small pieces and set aside.
In a mixing bowl, combine egg whites, almond milk, applesauce, sweetener, vanilla extract, and almond extract. Mix well.
In another small bowl, combine Quest Protein Powder®, coconut flour, and almond flour. Mix well.
Add dry mixture to wet. Then add coconut oil, baking powder, baking soda, and salt.
Fold in a 1⁄ 2 cup of blueberries.
Fill muffin cups 3⁄ 4 full. Add Quest Bar® pieces evenly among each muffin and press into batter.
Add remaining blueberries to the top of each muffin.
Bake for 22 to 25 minutes, or until an inserted toothpick comes out clean.
